You all made awesome suggestions on how I could turn my butternut squash into a family dinner. Well, I received another gift of vegetables and that gave me about five squash. And, I got to thinking I hadn’t made a casserole in a very long time. Not that you really would want to bake in the middle of august and turn on the oven. But, if you haven’t noticed, we’ve had some pretty cool days lately here in Pennsylvania.
Nothing better then covering vegetables with the kiddos favorite ingredient: cheese.
Cheese makes everything taste better, no matter what age you are.
The original recipe from food network called for crunched up crackers on top. Of course, I had some that morning, and a bunch of snack seeking kiddos munched them all. When all else fails use Italian breadcrumbs. Or at least that’s what I did. It was super yummy. Bug ate every bite and asked for seconds, while Boy still wasn’t sure. But hey, it had cheesy. Needless to say there wasn’t much left.
Now… what to make for supper next…
